Kym's Christmas Cookies

Here's a cookie recipe I made up and the measurement are not exactly precise. You just use stuff 'til you don't have any more of an ingredient.
  • 1lb BROCK'S brand chocolate covered creme candy (KMart sells them around Christmas time).
  • Ritz brand crackers
  • 1lb chocolate bark.
Fill a dinner plate with Ritz crackers, smooth side up. Place a candy centered on each cracker, then microwave for about 15 or 20 seconds. Place another Ritz cracker, smooth side down, on top of each candy and press down to make a "sandwich". Allow to cool while you break up the chocolate bark in a microwave safe bowl. Microwave the bark in 30 second increments until you can stir it smooth. Then dip each sandwich cookie into the chocolate and place on waxed paper until the chocolate firms up. You can decorate these with colored frostings and sprinkles -- I like to make wreaths and Christmas trees on mine.

Enjoy! Kym

Almond-Butter Cookie

Delicious and classy!

melt 1/2 pound butter and mix with 1 cup sugar with mixer, add 1 3/4 cup sifted flour and 1 teaspoon Brandy extract and one egg yolk. Spread this in a 12 X 18 pan with your fingers, then spread the egg white all over the dough. Sprinkle with slivered almonds (about 1 package). bake at 255 degrees for 55 minutes. Cut immediately while still hot.

You'll receive lots of compliments. Will be very thin.
