This recipe began with a grandmother who was raised in an orphanage where she learned to cook this, passed it down to her dtr and so on and so on. It is called Mama's Spaghetti, but it is made with macaroni and it is really a hit at pot lucks. It does carry well.
You begin with 3 T bacon grease, heated to which you add 1 large onion chopped. Saute until translucent. Add 1 28 0z can of whole tomatoes, with juice and 1 28 oz can of crushed tomatoes, stirring to break them up slightly. Add 1 Tsp of garlic powder or to taste and 1 T onion powder and salt/pepper to taste. Stir to blend. Bring to a boil and reduce to simmer for 20 min.
Cook 4 servings of macaroni according to pkg directions. Drain macaroni and combine with the tomatoe sauce. Add 1 lb minus 1 cup of grated medium cheddar cheese and stir to blend. Place in a casserole dish. Top with the remaining cup of cheese. Bake at 375 degrees for approx. 30 min. or until top is bubbly and lightly browned. This is generally served with sliced cucumber and onions marinated in in the refrigerator w/ vinegar/water/salt/and pepper for abt 30-40 min. Add homemade bread/cornbread and yummy!!
