old-fashioned apple pie

Pie: Here is a recipe for the best old-fashioned apple pie ever! Use tart cooking apples, heaping the slices as high as you dare. Mix gently around: Bake at 375 until your nose and the golden crust tells you it's done.

It comes from my Hoosier mother-in-law. Feel free to use Pillsbury prepared pie dough, Mom did in later years, and if it was good enough for her, it's good enough for me! Mom would sprinkle sugar on her crust before baking.

Ham Pie # 1

(the older one and is like scalloped pototes.) Butter a baking dish and layer the potatoes, onions and cold thinly sliced ham using several layers. Cover with milk and dot with butter. Bake in a hot oven for one hour.

Ham Pie # 2

One 10" pie shell; do not bake Line the pie shell with 4 one ounce slices of swiss cheese. Cover the cheese with 1 cup of chopped leftover baked ham. ( I sometimes use a 6 oz can of ham if I do not have a baked ham. ) Thinly chop 4 green onions, tops included and cover the ham.

Combine 1 cup of half and half, 4 beaten eggs, 1 T flour, 1 tsp salt, dash each of pepper, cayenne pepper, and 1/4 tsp nutmeg. Stir in 2 T melted butter and 2 T dry sherry if desired. Beat well. Pour over ham mixture..... Bake at 375 degrees for 40 minutes or until golden. Let stand at least 20 min. before serving.

Sometimes I substitute a 6 oz can of crabmeat for the ham or sometimes tuna. I love the crab.
