Thai Beef Salad

Take a rump roast and have the butcher cut it in thin slices; stir fry with minced garlic and fresh grated ginger (use as much as you like); add salt to taste. Drain reserving liquid. Mix with sweet chili sauce for chicken (available at most oriential food stores) and red onion rings. Cool and serve over a bed of leaf lettuce. Take the reserved liquid and dilute with water, add bok choy and cook until tender. There you have soup and salad. Total prep and cooking time is 30 minutes.

Cauliflower Salad

This is easy for those who don't like to cook.
  • 1 small head cauliflower, chopped
  • 3 TBS chopped onion
  • 1 lb. bacon (I usually don't use this much)
  • 1/2 cup cheese, cubed
  • 4 tsp white vinegar
  • 1 cup frozen peas
  • 1 TBS sugar
  • 1 1/2 to 2 cups Miracle Whip
Combine sugar & Miracle Whip. (I find that if you whip in a little milk to the Miracle Whip, it goes farther and easier to mix with other ingredients). Pour over rest of ingredients and chill.

Oriental Chicken Salad

  • 2 cups chicken breast, cooked and diced
  • 1 small green cabbage, finely shredded
  • 1 small red cabbabe, finely shredded
  • 12 green onions, finely sliced
  • 2 pkgs chicken-flavored Top Ramen noodles, finely crushed
  • 3/4 cup almonds, slivered
  • 1/2 cup sesame seeds
DRESSING:
  • 6 TBSP sugar
  • 7 TBSP rice vinegar
  • 1 cup oil
  • 2 tsp pepper
  • 2 tsp salt
  • 2 flavor pkgs Top Ramen seasoning mix
Mix together and pour on salad. Keeps 4-5 days, if refrigerated.

Old Fashioned Cream of Tomato Soup

  • 32 oz canned diced tomatoes
  • 9 oz chicken broth, undiluted
  • 1 oz butter
  • 2 TBSP sugar
  • 1 TBSP chopped onion (or more, if you want)
  • pinch of baking soda
  • 2 cups cream (I use half & half, because I don't need the calories)
Mix tomatoes, chicken broth, butter, sugar, onion, and soda. Simmer 1 hour. Heat cream in double boiler (necessary to keep from curdling when added to hot tomato mixture). Add cream to hot tomato mixture.
